I plan on making spanakopita for dinner tonight. This Greek dish is made with phyllo dough and is packed with spinach, feta and ricotta cheeses and garlic — lots of garlic. My kids have been begging me to make this dish. This surprises me, because this isn't usually the sort of thing they like. It might be they like it because I make them in little pockets, so they are great finger foods. No silverware required.
